crock pot orange chicken | ..

I found this recipe on my hubs? board titled: Food I Want My Wife to Make. Haha ? nothing indirect about that! ?We made it for dinner and it turned out pretty good, although I would make one modification if I made this again, and I have noted that in the recipe.

crockpot orange chicken

Ingredients

  • 3 or 4 boneless, skinless chicken breasts chopped into bite-sized pieces
  • 1/3 c. flour
  • 2 Tbsp olive oil
  • 1 tsp balsamic vinegar
  • 3 Tbsp ketchup
  • 6 oz. (I'd change this to 4 oz) frozen orange juice concentrate, thawed (if using 4oz, add 2 oz water)
  • 4 Tbsp brown sugar
  • 1/2 Tbsp salt

Cooking Directions

  1. In a small bowl whisk the vinegar, ketchup, orange juice, brown sugar, and salt until smooth and no lumps.
  2. Add flour to shallow bowl and add the chicken pieces. Toss to coat well, shake off excess flour and add chicken to a fry pan with the olive oil, heated to medium high. Brown the chicken on all sides. Note: the chicken does not have to be fully cooked since it will cook more in the crock pot.
  3. Add the cooked chicken to the crock pot and cover with OJ mixture. Stir well to combine ingredients.
  4. Cook on high for 3 hours, or low for 6 hours.
  5. Serve over white rice.

You could also garnish the dish with some red pepper flakes to make it spicier; we liked the flavor but felt it was a bit ?orangey? which is why I?d lower the amount of OJ in the dish. Other than that, everything else was great ? the breading wasn?t too much and the flavors were a perfect topper for traditional white rice. ?I love using the crock pot for dinner that is ready when I?m off work! Now if I could just remember to buy those crock pot liners at the store next time so we don?t have to keep scrubbing the pot when dinner is over?
